Soul Calibur
Another reason that the Dreamcast deserved to do better than it did. Soul Calibur was way ahead of its time in beauty - I've seen PS3 games that looked worse - and the characters were all really interesting and unique without being wacky and garish. Too bad the sequels got beat with the ugly realism stick (and the 'dumbass overblown plot' stick... and the 'Ivy's tits just look kind of ugly and saggy now' stick).
